Zesty Pesto Green Beans: Easy Appetizer or Snack!
When my sister brought us a bag of green beans, I knew exactly what I’d do with them.
We eat a lot of green beans in our home, and for summertime snacks and even an appetizer, you might want to try this easy recipe!
Zesty Pesto Green Beans
Cut the ends off the green beans and wash.
Place in a microwavable bowl, add a small amount of water, and microwave (steam) for 5-7 minutes.
Allow to cool.
Add sea salt and white pepper to taste.
Add 1/4-1/2 cup Costco’s Pesto (or make your own). Stir.
You can do so many things with these green beans. Here are a few of my ideas:
Serve cold as an appetizer.
Heat up and serve as a side dish.
Cup up and use in a salad.
Cut up for Pot Pie or Shepherd’s Pie.
But what I really love is that they make a perfect zesty summertime snack!

in the Philippines, we saute this in oil with garlic, onion and tomato, seasoned with salt and soy sauce.
Pesto on almost anything and I am happy! I have one recipe that is similar with the addition of baby red potatoes…yum! I also like to cook my green beans with a little lemon juice and lemon zest.
Love that Costco pesto!! Now another use!
Oh, I should add that I prefer to plant them and share them with the deer..seeing as that’s what I’ve done this year apparently!
I love them in a stirfry or in a summer salad!
I like mine a little limp and soggy sometimes, too. (especially if they are frozen), but for FRESH….I just string them, blanch, cold water bath and I’ve been known to munch on them just like that….no seasoning at all.
For cooking, though, I think garlic, ginger, fresh ground nutmeg tossed with blanched beans are delish. ONLY about 2-3 min, so the beans still have crunch.
I pickle green beans. So cheap and easy. Jars sell for upwards of $7/jar, but I can pickle 20 jars for about $7.00
I don’t have the luxery of having beans in my garden, so I buy them, therefore I am REAL picky. I choose the longest, straightest ones.
My southern mother in law had green beans, would sting and snap them, then cook them to death with a ham hock, until they were almost mush….then add cut up potatoes, until the potatoes were fork tender,…..then drain and fry the whole mess in LARD. OH MY, wonderful flavor….but…..NO.
So. I redid the whole thing, and it will never equal her flavor, but tastes great.
I love mine sauteed with garlic and sea salt. To be honest I like the ones that get a little limp and soggy.
I LOOOOVE roasted green beans – in the oven with a bit of olive oil and sea salt, until they are nice and brown and the skinny ones are cruncy. I eat them straight off the pan, usually before they make it to the plates. I’m sure I’m destroying all the nutritional value, but oh, bliss!

I love frying them in HOT olive oil with fresh garlic, seasoning salt and a tiny bit of red onion!
