Fast and easy recipe when you’re in a pinch and have a box of Bisquick or Pamela's (gluten-free) Baking Mix. Make in a 9×13 pan, or a 3.5-quart braiser!Make your own Biscuick: Mix together 1 cup flour, 1/4 t salt, 1 1/2 tsp baking powder, and 1 tablespoon butter.
Ingredients
4cupsmilk
2cupsBisquick, or baking mix
8eggs
2cupscheese, Sharp Cheddar, Pepper Jack, Gruyere, or Swiss
1 ½tsp.salt
Pepper to taste
Meat:
1cupBacon, sausage, ham
Veggies:
1cupGreen chilies, grates zucchini, tomatoes, mushrooms, green onions, red onions
Serve with:
Sour cream, salsa, chopped tomatoes, fresh herbs
Instructions
Heat oven to 400. Spray a 9×13 pan with cooking spray (or a round Le Creuset braiser).
Blend together the milk, baking mix, eggs, cheese, salt, and pepper.
Pour over your choice meat and chopped, drained veggies (about 2 cups worth).
Sprinkle with fresh basil or cilantro.
Bake for 40-45 minutes. It might be slightly jiggly in the center. Rest for 5-10 minutes before serving.
