Pear Romaine Lettuce Salad with Blue Cheese

Ingredients

  • 2 large heads romaine lettuce chopped
  • 2 pears cut into bite-sized pieces
  • 4-6 oz of crumbled blue cheese
  • 1/2 cup olive oil
  • 1/4 cup rice wine vinegar
  • 2 Tbsp. minced shallots
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. real maple syrup
  • 1/4 cup dried cherries
  • 1/3 cup coarsely chopped hazelnuts
  • Orange or clementine zest optional

Instructions

  • Layer lettuce, pear, blue cheese, hazelnuts, and cherries in a large salad bowl.
  • Whisk together olive oil, vinegar, shallots, lemon juice, and maple syrup.
  • Pour over salad and toss to combine.
