Ceviche Shrimp Recipe With Mango and Avocado

  • 1/2 pound cooked baby shrimp
  • 3/4 cup white vinegar
  • 1/2 cup coconut milk
  • 1/2 cup finely chopped fresh cilantro
  • 1 small red bell pepper seeded and finely chopped
  • 1 ⁄2 small red onion finely chopped
  • 1 ripe mango cubed
  • 1 ripe avocado cubed
  • 3 limes juiced, plus wedges to serve
  • Kosher salt and freshly ground black pepper to taste


  • Toss shrimp in vinegar and allow to marinate for 15-20 minutes before draining and rinsing.
  • In a medium bowl, combine lime juice, coconut milk, mango, avocado, onion, shrimp, bell pepper, and cilantro. Salt and pepper to taste.
  • Serve with cherry tomatoes, cilantro, and fresh lime. Eat by itself or on corn tortillas!
