If you can't find leeks in the grocery store, you can replace them with shallots. Optional to leave out the chicken and make this soup vegetarian!Enjoy a bowl of Chicken Curry Lentil Soup, a crock pot lentil soup made with chicken, lentils, leeks, and fresh peas.
Ingredients
2leeks, thinly sliced
114 oz containerMirepoix, chopped onion, carrot, celery, from Trader Joe’s
2clovesgarlic, minced
8cupschicken broth
116 oz.package green lentils
114 oz.can diced tomatoes, do not drain
1tsp.kosher salt
½tsp.black pepper
1Tbsp.curry powder
1tsp.ginger
Pinchof cayenne pepper, optional
2cupsshredded cooked chicken, optional (I use Rotisserie)
1-2cupscooked peas, drained
3Tbsp.snipped fresh dill, cilantro, or parsley
Instructions
In a slow cooker, combine all of the ingredients (except chicken and fresh herbs).
Cover and cook on high heat for 3 hours, or on low heat 4-5 hours.
Stir in the chicken (optional), cooked peas, and fresh herbs. Add more salt and pepper to taste if needed.
