Mango Salsa Teriyaki Chicken Lettuce Wraps

Servings: 18 wraps
Makes 18 wraps (on small lettuce leaves) probably about 9 on a larger leaf


  • 2 ripe mangoes, cubed
  • 1/4 red onion, chopped
  • 1 bunch cilantro, chopped
  • 2 limes, juiced
  • 6 marinated teriyaki chicken thighs, cubed
  • 2 ripe avocados, cubed
  • 1 lime
  • Salt and pepper
  • 2 romaine lettuce heads, outside leaves


  • Grill chicken thighs, cube, and set aside.
  • Combine mango, red onion, chopped cilantro, and two juiced limes in a large bowl and set aside.
  • Cube avocado and mix in bowl with salt, pepper, and juice of one lime.
  • Add chicken, salsa, and avocado to a romaine leaf and enjoy!
  • Serving size may differ depending on the size of your romaine leaves! We used small romaine heads, so the serving size is high.
