Mango Salsa Teriyaki Chicken Lettuce Wraps
Makes 18 wraps (on small lettuce leaves) probably about 9 on a larger leaf
Servings: 18 wraps
- 2 ripe mangoes cubed
- 1/4 red onion chopped
- 1 bunch cilantro chopped
- 2 limes juiced
- 6 marinated teriyaki chicken thighs cubed
- 2 ripe avocados cubed
- 1 lime
- Salt and pepper
- 2 romaine lettuce heads outside leaves
Grill chicken thighs, cube, and set aside.
Combine mango, red onion, chopped cilantro, and two juiced limes in a large bowl and set aside.
Cube avocado and mix in bowl with salt, pepper, and juice of one lime.
Add chicken, salsa, and avocado to a romaine leaf and enjoy!
Serving size may differ depending on the size of your romaine leaves! We used small romaine heads, so the serving size is high.
