Chicken Pineapple Cilantro Layered Salad

  • 1 cup Briannas Creamy Cilantro Lime Dressing or our favorite dressing
  • 1 pound rotisserie chicken chopped
  • 1 15 oz. can Bush’s Black Beans rinsed and drained
  • 1 15 oz. can Bush’s Kidney Beans optional, if you want more beans, or add 2 cans of black beans, rinsed and drained
  • 2 large romaine hearts chopped
  • 1 20 oz. can pineapple chunks drained (or 1 1/2 cups fresh pineapple)
  • 2 cups cherry tomatoes sliced in half
  • 1 cup queso fresco cheese crumbled
  • 1 cup fresh cilantro chopped
  • Avocado optional


  • In a large glass bowl, layer half the lettuce, all of the chicken, beans, half the lettuce, pineapple, cheese, tomatoes, and cilantro.
  • Serve with a side of dressing!
  • Optional to dump all ingredients in a large bowl; toss and serve (instead of layering the ingredients).
  • Serve immediately, or toss together in a large bowl. You can cover with plastic wrap and refrigerate until ready to serve.
