Cranberry Almond Chicken Salad Wrap

  • 2 cups chopped romaine lettuce
  • 1 cup cooked shredded or chopped chicken (I use rotisserie)
  • 2 Tbsp. dried cranberries
  • 4 Tbsp. feta cheese
  • Sliced cucumber
  • Blue Diamond Roasted Salted Almonds or your favorite Blue Diamond flavor, roughly chopped
  • 2 Tbsp. Caesar or Blue Cheese vinaigrette dressing
  • 4 large whole wheat flour tortillas


  • In a bowl, combine the romaine, chicken, cranberries, feta cheese, and sliced cucumber. Stir to combine.
  • Microwave the tortilla for 10-15 seconds, so that it will be easy to roll. Spread the lettuce mixture down the middle of the tortilla. Sprinkle with almonds. Fold in the two sides of the tortilla, then roll up like a burrito.
  • Cut wrap in half to serve.
  • Any flavor of Blue Diamond Almonds is delicious!
