Cantaloupe Honey Shaved Ice

Makes about 1 quart.
Ingredients
4
cups
ripe cubed cantaloupe
,
from a 3–4 pound melon
¼
cup
honey
,
plus more to taste
¼
cup
lime juice
¼
teaspoon
kosher salt
Instructions
Combine all ingredients with ¾ cup water in a blender and purée until smooth. Add more honey to taste.
Prepare a large loaf pan or 8×8 pan; line with parchment paper. Pour the mixture in and freeze for at least 4 hours.
After frozen hard, scrape off the top (or shave with a spoon), which will be icy. Serve in a small dish; garnish with mint (optional).
The shaved ice will keep in the freezer for up to 1 month.
