Pineapple Black Bean Guacamole

  • 3 large avocados, halved, seeded, and peeled
  • 1/2 cup green salsa, salsa verde
  • 1/4 cup sour cream
  • 1 can finely chopped fresh pineapple or canned crushed pineapple, drained
  • 1 15 oz can Bush’s black beans, rinsed and drained
  • 1 fresh jalapeno chile pepper, seeded and finely minced
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 3 large garlic cloves, minced
  • 3 Tbsp. lime juice
  • 1/2 tsp. salt
  • 1 tsp. ground cumin
  • 1 Tbsp. dried cilantro


  • In a large bowl mash avocados. Stir in salsa and sour cream until combined. Stir in pineapple, beans, jalapeno, onion, cilantro, garlic, lime juice, salt, and cumin.
  • Cover and chill for 2 hours or until ready to serve. Sprinkle with dried cilantro. Serve with tortilla or pita chips.
