The classic meal in a foil pouch, Vegetable Sausage Foil Pack Dinner, is easy to prepare at home in heavy-duty foil, and cook on a campfire (you will need tongs, hot pads, and a cooking grate).
Ingredients
1large, 2 small sweet potatoes
4-6asparagus, each stem broken into 3 pieces
3sausage links, cut into 1-inch chunks
1small red onion, cut into wedges
1yellow or orange pepper, cut into 1-inch chunks
1small zucchini, cut in 1-inch chunks
1teaspoonkosher salt, divided
1teaspoonpepper, divided
Olive oil
Tin foil
Instructions
Cut 4 sheets of heavy-duty foil into 16-inch squares and place on flat work surface.
Prepare veggies: Microwave the sweet potato for 2-3 minutes. Cut into 2-inch pieces, leaving the skin on. Cut the other veggies into pieces; place in a bowl and cover with plastic wrap (with 2 Tbsp. water) and steam for 3-4 minutes.
Cut the sausage into pieces and sauté until lightly brown on each side.
Divide the meat and veggies into 2 pieces of foil; salt and pepper the ingredients and drizzle with olive oil. For each pouch, bring 2 opposite sides of foil together across the middle, and fold to make a seam 1 inch wide. Do on the opposite end to seal the pouch securely.
In a fire pit, build a wood fire about as wide as the cooking grate. Let it burn to low flames and embers.
Set bundles on grill and cook, turning over with tongs every 10 minutes, until vegetables are tender, about 30 minutes (to check, open with a knife).
Protecting hands with grilling gloves, open pouches and garnish with fresh herbs and Parmesan cheese.
