Oreo Mint Pistachio Ice Cream Pie
Keeps up to 10 days. Use your favorite flavor of ice cream, and flavored Oreo cookies!

- 30 Oreo cookies mashed
- 1/2 gallon Favorite flavor ice cream
- 1/2 cup butter softened
- 1 4 oz jar Fudge topping (I use Trader Joe’s)
- 3/4 cup pistachio nuts
Mash cookies in a Ziploc bag (sealed; use a rolling pin).
Mix mashed cookies with melted butter and press into an 8” pie pan, reserving 1/2 cup.
Spread ice cream on top of Oreo crust.
Spread fudge topping over ice cream. Sprinkle with remaining crumbs and then the nuts on top; freeze for at least 2 hours before serving.
