Preheat oven to 350 degrees For best results, line a baking sheet with parchment paper.
In a medium mixing bowl or stand mixer, add tahini, coconut sugar, almond milk, vanilla, egg, cinnamon, nutmeg, and salt. Gently blend together.
Add in oats, pecans, white chocolate, and cherries. Mix the batter until all of the ingredients are evenly incorporated.
Using a cookie scoop, portion out the batter onto the baking sheet and then gently flatten them using the palm of your hand. [Divide balls into 12 large or 24 small.]
Sprinkle with a pinch of flake salt.
Bake cookies for 10-12 minutes. Allow to cool for another 10 minutes before serving. ENJOY!
