rinsed and drained

Cojita cheese
Red cabbage

finely shredded

Sliced olives

Red salsa

Sweet hot jalapeño peppers

cut in wedges
Blue corn chips
Yellow corn chips
Cherry tomatoes

Radish for garnish
Instructions
Heat up the black beans (you can add a little spice or onions to them if you choose) so the Cojita cheese will melt.
Heat the tortillas (in oven or microwave), or optional to fry them first.
Put the other ingredients in small bowls or on the board.
Serve with your favorite chips and salsa and let everyone make their own mini tacos!
