Vegetarian Tacos for everyone!

A few weeks back, we indulged in some VEGGIE TACOS with a few of our neighbors.

Here’s what I love about a Veggie Taco Board.. There’s still plenty of protein with black beans and cheese, and you can add many of your favorite toppings!

Ingredients for a Vegetarian Mini Taco Board

  • 20-inch board (the board in these photos is not available any longer, but no worries, you can purchase my 20-inch board)
  • Street Tacos Whole Wheat Tortillas (we buy Mission brand)
  • Black beans, rinsed and drained
  • Sour cream
  • Corn salsa (we buy at Trader Joe’s)
  • Cojita cheese
  • Red cabbage, finely shredded
  • Sliced olives, drained
  • Red salsa
  • Sweet hot jalapeño peppers
  • Limes, sliced
  • Blue corn chips and yellow corn chips
  • Cherry tomatoes
  • Radish for garnish

Spice up the tacos!

Mini tacos shells are delicious and fun, too! And if you want to add a few spices like cumin or red chili pepper to the black beans, that’s a nice “spicy” touch!

  • MAKE IT VEGAN: Skip the cheese, or try my Vegan Pita Taco Board.
  • MAKE IT GLUTEN-FREE: Be sure to buy 100% corn/certified gluten-free tortillas.

How to serve the taco dinner board?

Set it out, they will come!

  1. Heat up the beans (you can add a little spice or onions to them if you choose) so the Cojita cheese will melt. 
  2. Put the other ingredients in small bowls or on the board.
  3. Right before serving, heat the tortillas (in oven or microwave), or you can fry them.
  4. Serve with your favorite chips and salsa! Also, we love this Quick Mexican Brown Rice recipe!

Ingredients
 

  • Street Tacos Whole Wheat Tortillas, (Mission brand)
  • 1 can Black beans, rinsed and drained
  • 1 cup Sour cream
  • 1 cupp Corn salsa, we buy at Trader Joe’s
  • 1 cup Cojita cheese
  • Red cabbage, finely shredded

  • 1/2 cup Sweet hot jalapeño peppers
  • 1-2 Limes, cut in wedges
  • Blue corn chips
  • Yellow corn chips
  • Cherry tomatoes
  • 1-2 Radish for garnish

Instructions
 

  • Heat up the black beans (you can add a little spice or onions to them if you choose) so the Cojita cheese will melt.
  • Heat the tortillas (in oven or microwave), or optional to fry them first.
  • Put the other ingredients in small bowls or on the board.
  • Serve with your favorite chips and salsa and let everyone make their own mini tacos!
