Red onion, salsa, flavored butters, Boursin cheese, favorite cheese (goat, feta, Gruyere, etc.). Add more veggies like chopped bell peppers, air fried broccoli, and make a cheese sauce.
Instructions
Preheat the air fryer to 400°F (180ºC).
Wash the potatoes and poke each potato with a fork on every side.
Place the potatoes in the air fryer basket, spray evenly with cooking spray, and season with salt and pepper.
Cook at 400°F for 35-45 minutes, depending on how large they are. Optional to flip over half-way through (to get crispiness all around).
Remove from the air fryer and allow to cool.
When ready to serve, cut each potato with a knife lengthwise. Squeeze open and push together to mush the potatoes (on top).
Top with butter, sour cream, crispy bacon, chives, and more fresh cracked pepper.
