With lots of golden brown and bubbly cheese, this easy air fryer Zucchini Parmesan recipe is a great snack or side dish! TIP: Do not overcrowd the air fryer basket. Cook the parmesan zucchini in batches if needed.
Clean and dry the zucchini. Cut into 1/4-inch slices (use a mandolin). Add the rounds to a large bowl and drizzle with olive oil. Add salt, pepper, and onion powder and gently toss. Next add the parmesan cheese and toss again until well coated.
Turn the air fryer to 400 degrees. Line the tray with foil, and lay down the coated zucchini in a single layer. Spritz with olive oil and cook for 10 minutes, flipping the zucchini halfway through. Cook in batches until the zucchini is done, tender and the cheese is golden brown.
Remove to a plate and serve as a side dish or with favorite dipping sauces (aioli, sriracha, BBQ sauce, Ranch dressing, etc.)
