Tender chunks of Granny Smith apples layered in a spiced sour cream cake, topped with a sweet vanilla-maple glaze. This easy apple fritter cake brings all the bakery flavor without the frying!
Ingredients
For the Filling:
2cupspeeled and diced Granny Smith apples, about 2 medium
In a saucepan over medium heat, cook the diced apples with granulated sugar, cinnamon, cornstarch, and water for 5-6 minutes until the apples are tender and the liquid has thickened. Allow to cool. Mix the brown sugar and cardamom in a small bowl and set aside.
Preheat the oven to 350°F and grease a 9x13-inch pan. Cream the butter and sugar together until light and fluffy. Mix in the applesauce, vanilla, and eggs until smooth.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and cardamom. Add the dry mixture and sour cream alternately to the wet ingredients, mixing until just combined.
Spread half the batter into the prepared pan. Top with the apple mixture, then sprinkle with ⅔ of the brown sugar mixture. Cover with the remaining batter and top with the remaining brown sugar.
Bake for 35-40 minutes until the center is set. Meanwhile, whisk together the glaze ingredients until smooth.
When the cake comes out of the oven, poke holes all over the surface and pour the glaze over the top. Let set for 20 minutes before serving.
