Egg bites are cheesy, puffy, low in carbs and high in protein. This bacon egg muffins recipe is the perfect make-ahead breakfast for on the go!
Ingredients
Make the egg bites:

large eggs

lb
bacon

cooked and crumbled

cups
Gruyere cheese
Salt and fresh cracked pepper

to taste

Italian seasoning

crushed chili pepper flakes

Serve on the Big Board:

Mini cinnamon rolls
Large red grapes
Banana bread
Parsley

for garnish

Instructions
Preheat oven to 400°F (200°C). Grease a 12 count muffin pan with oil or non-stick cooking spray. Set aside.
Add cracked eggs to a large mixing bowl and whisk together with salt and black pepper.
Stir in cooked bacon, Gruyere cheese, Italian seasoning, and red chili pepper flakes.
Divide evenly into muffin cups, about 2/3 full. Sprinkle on top with more bacon and cheese.
Bake the egg bites for 12-15 minutes, or until set.
Allow to cool a bit and serve your cheesy bacon egg bites immediately, or enjoy cold, or at room temp.
Serve on a breakfast board:
Arrange the cinnamon rolls, banana bread, and fruit on the board. Leave space for the warm egg bites. Garnish with parsley sprigs and serve!
