Preheat the oven to 350 degrees. Grease two 8-inch loaf pans (or 4 small pans).
In a large bowl, stir together the flour, sugar, cinnamon, baking soda, and salt. Add the oil, bananas, cranberries, coconut and eggs. Mix well. Pour into prepared pans.
Bake for 1 hour (or less if small pans). Allow the loaves to cool for 10 minutes before turning onto a rack. ENJOY!
