Easy and fun to make with no messy melted chocolate, these Birds Nest Cookies are the perfect treat for Easter or spring! Served on the 12x24" board. Need 4 muffin tins x 4 recipe to make (48).

Ingredients

  • ¼ cup milk
  • ¼ cup butter
  • ¾ cup sugar
  • 3 tbsp cocoa powder
  • ½ tsp vanilla
  • ½ tsp coconut extract
  • 1 ½ cups quick cooking oats
  • ¾ cup coconut
  • Whoppers Candy Eggs or Cadbury Mini Eggs, or Cadbury Mini Eggs or Jelly Beans

Instructions

  • Prepare a muffin pan with cupcake liners (or use a silicone muffin pan.) Set aside.
  • Bring the milk, butter, sugar and cocoa powder to boil for 2 minutes. Remove from heat and add the vanilla, coconut extract, oatmeal and coconut; mix thoroughly.
  • Use a cookie scoop or large spoon to portion the cookie dough into the prepared muffin pan.
  • Use a spoon to create a recess in each nest. Add 2 robin’s egg candies to the recess of each nest. The cookies will quickly set within about 15 minutes. They will be fully set and dry after 2 hours.
