Preheat the oven to 350 degrees F. Prepare a baking sheet with parchment paper.
Cut out the middle of the brie with a knife leaving about a ½ inch rim around the brie
In a small bowl, add melted butter, dark brown sugar, chopped pecans, and dried cranberries and mix together with a fork. Pour the mixture into the carved out brie wheel with all of the mixture. Some of it may run over the side. Place on a baking sheet or baking dish.
Bake for about 15-20 minutes.
It will puff up as the cheese melts and will be very gooey when you pull it out of the oven.
Sprinkle lightly with fresh chopped rosemary.
Serve with toasted bread and apple slices and gingersnap cookies.
Keep leftover brie refrigerated.
Notes
In a cast iron. or ceramic dish, it will stay scoopable for 15 minutes or so. You can pop it into the microwave for 15 seconds to warm it up and make it gooey again, or cover with oil and put it back into the oven for 5 minutes or so.Keep leftover brie refrigerated.
