Instructions
Combine the lettuce, sun dried tomatoes (and/or regular tomatoes), artichoke hearts, croutons, and Parmesan cheese in a large bowl.
In a small bowl make the dressing by combing the Greek yogurt, olive oil, lemon juice, garlic, salt, pepper and 1/2 cup Parmesan cheese. Mix together well.
Right before serving, toss the salad with dressing (don’t over dress the salad); serve!
