This fresh Chicken Mango Bacon Salad is scrumptious, especially with grilled chicken and a sweet orange dressing. I buy pre-sliced mango at Trader Joe’s. Delicious when in season and perfect for a quick salad. You can buy precooked bacon and lightly heat on the stove or microwave.

Ingredients

Grilled chicken breasts
Salad greens
Cucumber
Feta Cheese
Cashews
Mango chunks

Make the dressing:

1 medium orange, juice squeezed
2 T. olive oil
2 T. rice vinegar
2 tsp. honey
¼ cup red onion, finely chopped
6-8 slices cooked bacon, crisp and crumbled

Instructions

Prepare the greens, chicken, mango, cucumber, feta, and cashews in a large salad bowl.
Squeeze the orange into a small bowl. Add the olive oil, vinegar, and honey. Whisk together. Add the chopped onion and crumbled bacon.
Pour the dressing onto the salad. Toss and serve.
