Ingredients

cooked chicken breasts
¾
cup
mayonnaise
¼
cup
pickles
,
chopped (we love sweet pickles!)
Juice of 1/2 to 1 lemon
Table salt and pepper
Romaine lettuce leaves

crisp
Croissants
,
or bread of your choice, like Hawaiian rolls
Roasted asparagus
Roasted grapes
Your choice of other snacks
,
like olives, pickles, cheese, veggies, crackers
Instructions
In a mixer, combine the chicken and mayo until smooth and spreadable. Mix in the pickles along with the lemon juice, and salt and pepper to taste.
Place the chicken salad in a bowl and set on a board.
Serve with crisp romaine lettuce leaves, bread and extra mayo, for people to make their own sandwiches.
Add roasted Aasparagus and roasted grapes, and other snacks to the board to round out the party at your table.
