From The Weeknight Dessert Cookbook. This Chocolate Crisp is made with cherries and almonds, a delightful "anytime" dessert served with vanilla ice cream or fresh whipped cream!
Preheat oven to 375 degrees. Grease an 8-inch square baking dish with butter.
To make the filling, place the cherries in a large bowl. Add the sugar, almond extract, cornstarch, and salt. Stir to combine and then pour the filling into the prepared baking dish. Scatter chocolate chips over the cherries, to create an uneven layer, with plenty of dips for the crisp topping to fill.
To make the topping, stir together flour, oats, almonds, and brown sugar in a medium bowl. Add the melted butter and stir to combine. Sprinkle topping over the fruit. Bake for 28 minutes, or until crust turns golden brown.
Serve warm from the oven. Top with vanilla ice cream or whipped cream if desired!
