Enjoy a bite of Goat Cheese & Crispy Prosciutto Crostini, a delicious prosciutto with fig crostini appetizer that is perfect for any party. Makes 10-12 bites.
Ingredients
1baguette cut into 10-12 thin slices, about 1/4’’ thick
Olive oil to brush
3sheets prosciutto
5-6figs, quartered (I used two varieties, Celeste and Penache Tiger Stripe)
Preheat broiler to HI and lay the prosciutto sheets onto a baking sheet in a single layer. Set the baking sheet under the broiler for 2-4 minutes, depending on the broiler–keep an eye on the prosciutto to make sure it doesn’t burn. The sheets will begin to darken in color and sizzle. Remove the tray from the oven and transfer the prosciutto onto a paper towel—like bacon, they will stiffen and crisp as they cool. Break apart into large pieces.
Make crostini:
Preheat oven to 350 degrees. Brush the bread on both sides with olive oil, arrange on a parchment-lined baking sheet, and bake until golden and crispy—10-15 minutes.
In a small bowl, mix the goat cheese, thyme, honey, and a pinch of salt.
Assemble crostini:
Smear goat cheese onto crostini and top with fig pieces, prosciutto and walnut pieces.
Optional to drizzle with more honey (or balsamic glaze) and add a sprinkle of herbs on top!
