Season pork loin on both sides with salt and pepper. Prepare the crock pot with cooking spray.
Place pork loin (I like it sliced into 3/4-inch pieces, such as chops) into a slow cooker and top with red wine {optional} and marinara sauce. Cover and cook for 6-7 hours on LOW, or 4-5 hours on HIGH.
Prepare pasta according to package directions.
To serve, remove individual pork piece from crock pot and place on top of pasta. Spoon sauce on top. Garnish with fresh basil and Parmesan cheese.
