In a large pan, heat the ghee over medium-low heat. Add the flatbreads to the pan and divide 3 cheese slices onto the two flatbreads. Toast the bread until golden—2-3 minutes. If the cheese isn’t melting, partially cover the pan with a lid. Sandwich the flatbreads together and set aside tented with foil or in a warm oven.
When ready to serve, halve the sandwiches and serve with soup or by themselves.
