In a large bowl, gently combine the ground beef, cooled onions, mayonnaise, salt, pepper, and Montreal Steak Seasoning using your hands until just mixed.
Divide the meat into two equal portions and form each into 5 patties (10 total), about ¾-inch thick. Press a small indentation in the center of each patty.
Place the patties on a parchment-lined platter and refrigerate for 30 minutes to firm up before cooking.
In a small bowl, mix the special sauce ingredients until smooth (if using) and refrigerate.
