Using sweet, juicy Bartlett pears, this cake is delicious served with whipped cream or Vanilla ice cream. You can even drizzle honey on top! I’ve made this with gluten-free flour–excellent!
Ingredients

cinnamon

nutmeg

eggs
1
cup
honey
1/2
cup
buttermilk
1
cup
vegetable oil
1
tsp.
vanilla

pears
,
diced in 1/2 inch cubes
Instructions
Preheat the oven to 350 degrees.
Prepare a 9×12 baking pan or 10-inch round cake pan by coating with cooking spray.
In a large bowl, mix together the flour, baking soda, salt, cinnamon, and nutmeg.
Add the eggs, honey, buttermilk, oil, and vanilla. Mix well.
Gently stir in the diced pears. Pour into the prepared cake pan.
Bake for 40-50 minutes (depending on the size of the pan you use), or until a toothpick inserted into the middle comes out clean.
Serve warm with whipped cream or vanilla ice cream.
