A perfect holiday salad full of fresh kale, crisp apples, toasted walnuts, maple vinaigrette and crumbled feta cheese! Hearty and delicious!
Ingredients

ribs removed and roughly chopped

crisp red apple

dried cherries

toasted walnuts

Dressing:
½
cup
walnut oil
¼
cup
rice wine vinegar

minced shallots

Tbsp.
fresh lemon juice

real maple syrup
Instructions
Make the dressing: Whisk together walnut oil, vinegar; shallot, lemon juice, and maple syrup.
Make the salad: In a large bowl toss together kale, apples, cherries, and toasted chopped walnuts.
Toss the salad with dressing and then top with feta sprinkles; serve!
