This easy meatloaf recipe is topped with mashed potatoes, cheese, and bacon, also known as a "Loaded Mashed Potato" Meatloaf casserole.
Ingredients

lean ground beef
⅔
cup
breadcrumbs

large eggs

Tbsp
Worcestershire sauce
1
small yellow onion diced

tsp
garlic powder
1
tsp
dried parsley
½
tsp
salt

tsp
ground black pepper

cups
mashed potatoes
2
cups
Sharp cheddar cheese
,
shredded
½
pound
bacon cooked and crumbled
3
Tbsp
fresh chives
,
finely diced
Instructions
Preheat the oven to 400 degrees F.
Add beef, breadcrumbs, eggs, Worcestershire sauce, garlic powder, dried parsley, salt and pepper to a large mixing bowl.
Using your hands, mix everything together but do not overmix.
Press meatloaf mixture into bottom of a 9×13-inch baking dish.
Spread the mashed potatoes over the top of the meatloaf layer.
Load up the potatoes by sprinkling all of the sprinkled cheese, and then bacon, over the top.
Cover with foil and bake for 25 minutes.
Uncover and bake for an additional 10-15 minutes.
Remove from the oven and let cool slightly, top with fresh chives, cut into squares and serve.
Optional to serve with more toppings!
Notes
Tip: Bake 6 extra large potatoes ahead of time. Cool, peel, and mash with 1/4 cup butter and 1/2 cup milk, plus add salt and pepper.
