Ingredients
Chicken Filling
- 4 cups cooked chicken, shredded or chopped (rotisserie chicken works great)
- 8 oz cream cheese, softened
- 1 cup cottage cheese
- ½ cup sour cream
- 1 10.5 oz can cream of chicken soup
- 1½ cups shredded sharp cheddar cheese
- 1 Tbsp dry ranch dressing seasoning mix, not prepared dressing - it needs to be the dry powder
- ½ tsp garlic powder
- 3 green onions, thinly sliced, plus more for garnish
- Black pepper, to taste
Buttery Ritz Topping
- 1 3.5 ounces sleeve Ritz crackers, coarsely crushed (about 30 crackers)
- 5 Tbsp butter, melted
- ½ cup freshly grated Parmesan cheese
- 1 Tbsp chopped fresh parsley, plus more for garnish
Equipment
Instructions
- Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
- In a large mixing bowl, beat the softened cream cheese until smooth. Mix in the cottage cheese, sour cream, cream of chicken soup, dry ranch seasoning, garlic powder, and black pepper until creamy and well combined.
- Fold in the cooked chicken, shredded cheddar cheese, and sliced green onions until everything is evenly combined. TIP: Taste to see if you need to add more salt.
- Spread the chicken mixture evenly into your prepared baking dish.
- In a separate bowl, mix the coarsely crushed Ritz crackers with the melted butter, Parmesan cheese, and chopped fresh parsley.
- Sprinkle the buttery cracker mixture generously over the entire casserole. You want lots of craggy pieces rather than fine cracker dust for the best crunchy topping!
- Bake uncovered for 30–35 minutes, until the casserole is bubbling around the edges, heated through, and beautifully golden on top.
- Let the casserole rest for 5–10 minutes before serving. Finish with fresh parsley and a few extra sliced green onions. Serve warm and enjoy!
