Using the same sheet pan, bake the broccoli, add the salmon, bake again – ENJOY!
Ingredients
4-6salmon fillets
6heaping cups fresh broccoli florets
1/4cupolive oil
1/4cupsoy sauce
Kosher salt and fresh ground pepper
2green onions, scallions, chopped
1cupfresh cilantro
1/4cuplime juice
2Tbsp.olive oil
2tsp.Parmesan cheese, grated
Instructions
Preheat oven to 425 degrees. Line a sheet with parchment paper or foil. Place the broccoli florets on top.
Drizzle the broccoli with olive oil, 1/4 cup of soy sauce, and lightly salt and pepper. Roast for about 15 minutes.
Meanwhile, combine the green onions, cilantro, lime juice, olive oil, and Parmesan cheese in a small blender. Process until finely chopped. Cover and refrigerate until ready to use.
Remove the broccoli from the oven. Arrange the salmon fillets, skinned side down, atop the broccoli. Spread the marinade evenly over the fillets.
Roast for 10 minutes, until the salmon is nearly cooked. Use the back of a spatula to press down and make sure it doesn’t feel “spongy” and is firm.
Place the pan under the broiler for 3 minutes. Serve with the broccoli and a side of rice.
