In a medium bowl, combine the cheddar cheese, cream cheese, 1/2 cup cooked chopped bacon, and ranch seasoning. Using a hand held mixer, mix until combined. It will be thick. Gradually add the beer and mix more.
Cover and refrigerate until ready to serve. Scrape into a serving dish or bowl and sprinkle with remaining 1/4 cup cooked, chopped bacon and finely chopped parsley. Serve with a variety of pretzels.
