Cauliflower rice is light and fluffy, like couscous, and you can buy it already riced (in small pieces), at Trader Joe’s or Costco. Or you can pulse the cauliflower florets in a food processor until they’ve broken down into tiny granules.
HONEY GINGER SAUCE:
2Tbsp. sesame oil
6Tbsp. soy sauce
3Tbsp. rice vinegar
2Tbsp. toasted sesame seeds
STIR FRY VEGGIES:
3/4c.coarsely chopped green onion
1Tbsp. sesame oil
3chicken breast, cubed
In large pan, heat sesame oil. When hot, fry eggs. Add cauliflower rice and 1/3 of the ginger honey sauce. Cook until cauliflower is soft.
In separate pan, add chicken and 1/3 of the honey ginger sauce. Cook chicken until it is almost fully cooked and add chopped bell pepper, zucchini, green onion, and snow peas. Add remaining sauce and cook until veggies are soft and chicken is fully cooked.
Layer cauliflower rice, chicken, and veggie stir fry. Garnish with green onion or avocado.
