Chop walnuts, almonds, and cashews into medium-sized pieces. This can be done with a knife or a food processor; just make sure to not chop them too finely.
In a large bowl, combine all of the nuts and seeds.
In a microwave-safe bowl, combine cinnamon, vanilla, maple syrup, and coconut oil. Melt in microwave until coconut oil isliquid. Be careful not to burn.
Add oil mixture to the nuts and seeds. Mix well, so all dry ingredients are coated.
Place parchment paper on a large oven-safe pan (9X13 or larger). Spread granola evenly onto the pan.
Bake for 30-35 minutes, stirring every 10 minutes.
