1dozen mini sweet peppers, red, orange, and yellow
1 1/2cupleftover dressing, stuffing
3/4cupMozzarella cheese, divided
Fresh thyme, finely chopped
Instructions
Preheat oven to 350 degrees.
Prepare the peppers by slicing off the “top” (concave) side of the peppers, leaving the stem. Scoop out the seeds and the membrane.
In a bowl, combine the stuffing and 1/2 cup cheese. Heat in microwave for 1-2 minutes until softened and cheese is melted. Allow to cool for a few minutes.
Spoon the stuffing cheese mixture into the peppers, pressing it into each half. Sprinkle with remaining 1/4 cup cheese.
Arrange the peppers on a baking sheet and bake for around 18 minutes, until peppers are softened and cheese is hot and bubbly.
