I love coming up with a healthy dinner for my family, like today’s recipe, Curried Sweet Potato and Quinoa Soup.
Ingredients
Olive oil spray

sweet onion
,
chopped
3
cups
quinoa
,
cooked
4-5
cloves
garlic
,
minced

teaspoon
sea salt
2
tablespoons
curry powder
1
tablespoon
ground cumin
6
cups
vegetable
,
or chicken broth
3
sweet potatoes
,
peeled and diced
1
large orange
Creme Fraiche
Instructions
Spray a large saucepan with olive oil spray and add the chopped onion. Cook for 8 minutes, until tender.
Add the garlic, sea salt, curry powder, and cumin. Cook for 4 to 5 minutes, stirring often.
Add in vegetable or chicken broth and sweet potatoes and bring to a simmer. Reduce to low and cover; cook for 30 minutes.
Remove from heat and allow to cool for 5 minutes.
Zest an orange and set aside. Cute the orange in half and juice it, pouring into the soup mixture.
Puree in batches using a blender or Vitamix (do not put the lid on top; use a cloth instead).
Add salt and pepper to taste, orange zest, and the 3 cups of cooked quinoa. Mix and heat through.
Serve with a dollop of Creme Fraiche. Add fresh herbs (optional).
