Instructions
Heat oil in large pan over medium-high heat. Add onions and saute for 5 minutes, stirring until the onions are soft. Add garlic and saute for 1 minute, stirring frequently. Add in the tomatoes, tomato paste, basil, salt, pepper, and crushed red pepper flakes, then stir to combine.
Continue cooking for 5 minutes, then turn the heat down to medium-low and simmer for 15 minutes. Taste, and season the sauce with additional salt and pepper if needed.
Add in the prepared meatballs (optional).
In the meantime, using the KitchenAid spiralizer, spiralize the zucchini . Place the zucchini on paper towels and salt, allowing to sit for 30 minutes. In a large saute pan over medium heat, heat the oil and toss the zucchini noodles, cooking for 2-3 minutes, right before ready to serve.
Place the zoodles on a plate, spooning sauce on top, with several meatballs. Sprinkle with fresh Parmesan cheese; garnish with fresh basil leaf and serve!
