soft goat cheese

garlic and herb

kalamata olives

pitted and chopped

green onion

lemon

fresh lemon juice

halved and cut lengthwise (remove seeds)
Instructions
Preheat oven to 350 degrees. On a cookie sheet, lay down the mini pepper halves, cut sides up.
In a small bowl, add all the ingredients (goat cheese, olives, olive oil, green onion, lemon juice and zest).
Mix together until well combined.
Fill each pepper half with the cheese mixture. Bake for 17-19 minutes, until the peppers are soft. Serve warm!
Notes
If using plain goat cheese, you can add your favorite herbs and salt and pepper.
