In large pan, add 2 Tbsp. of oil and allow to heat up. When hot, add sweet potato, stirring frequently for about three minutes. Reduce heat and place cover on top of potatoes. Stir occasionally for about 6-8 minutes, or until soft. When soft, salt and pepper to taste and set aside.
Add 2 Tbsp. oil into a separate hot pan. When oil is hot, add onion and mushroom, cooking on medium heat until translucent and soft, about 5 minutes. When cooked, add ground turkey, sweet potato, salt and pepper to taste, and spices. Constantly stir until meat is fully cooked.
Serve with fresh cilantro on tacos, taco salads, burritos, and more.
