This toasted pound cake is perfect for brunch or dessert. Buttery pound cake fried in butter and topped with mascarpone and fresh berries. YUM! If you don’t have coconut sugar, use brown sugar.
Ingredients
114 oz.pound cake loaf, store bought ok, cut into 1 inch thick slices (you should get about 8 slices)
Melt the butter in a large flying pan. For about 2 minutes, fry each slice on medium heat, until toasted and brown.
On each slice of pound cake, spread mascarpone cheese, sprinkled with coconut sugar, and top with fresh berries. Optional to add a small scoop of vanilla ice cream!
