On wooden or metal skewers, add 1 tomato, 1 gnocchi, 1 apricot half, and repeat until all skewers are full. Drizzle each generously with olive oil and season with salt and pepper.
Heat a grill to medium-high and add the skewers, rotating once or twice until all sides are lightly blistered—4-5 minutes.
Remove skewers from the grill and transfer to the serving platter. Drizzle with more olive oil if desired, and season with salt and pepper.

Serve with pesto for dipping, or another herby sauce.
