Instructions
In a large bowl, mix together the wet ingredients (eggs, olive oil, butter, Greek yogurt, milk, and tonic water). Add in the dried ingredients and gently mix (flour, baking powder and baking soda, and mix well. Then add in the dried cranberries, orange zest, toasted coconut flakes, and crunched up graham crackers.
Cook in a waffle baker for about 5 minutes, or longer (if you like them crisp).
Make sure to spray the waffle maker between each waffle in order to keep that crispy texture and flavor.
