Pumpkin Chocolate Chip Pear Pancakes

Ingredients

  • 1 1/2 cups spelt flour
  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1 cup almond or dairy milk
  • 2 tsp cinnamon
  • 1 tsp allspice
  • 1/2 tsp nutmeg
  • 2 tbsp coconut sugar
  • 1/2 cup oats
  • 1 tsp baking powder
  • 1/2-3/4 cup Chocolate chips
  • Optional Toppings:┬áMaple Syrup
  • Butter
  • Toasted pecans
  • Pears
  • Dried Cherries

Instructions

  • In a blender, combine all batter ingredients: flour, puree, eggs, milk, spices, sugar, and oats. Blend until smooth.
  • Heat a griddle on medium high heat. Spray pan, then pour on 1/2 cup to 3/4 cup of batter onto the pan. Sprinkle in chocolate chips and allow to cook until small bubbles form.
  • Flip pancakes and cook for an additional 1-2 minutes. Remove from pan and serve immediately with pears, dried cherries, maple syrup, toasted pecans, and butter.
