Friends, we just sent our Miz Abby off to college for her last year. It’s so hard to see the years fly by, but at the same time, it’s a beautiful thing to see your kids grow up and mature and take on their own lives.

Today I’m sharing one of the last meals Abby made for us before she left. We were headed out of the country, and it was a weekend—a time to enjoy a fun breakfast together. These Pumpkin Chocolate Chip Pear Pancakes are super fun for fall for a family dinner (or breakfast or brunch), or for having guests over. Don’t forget to make a Pumpkin Latte, too! I love how hospitable my daughter is up at school. She cooks for her friends on the weekends.
We are meant to bring hospitality with us wherever we go. And this word can play out in so many areas of our lives. We have many opportunities to live “hospitably” in so many ways.
We all know people who we would say are very hospitable people, but they never invite others into their home. Never! (Or maybe twice a year, for 2 holidays). These may be the people who bring a meal to you when your family needs it, or they come and sit with you when your parent dies, or they help out with your kids.
Being generous with love and support and a warm caring spirit is hospitality. No matter what the surroundings, whether you’re in another country or in your own home, the spirit of love and kindness comes with you.

Pumpkin Chocolate Chip Pear Pancakes
Ingredients
- 1 1/2 cups spelt flour
- 1/2 cup pumpkin puree
- 2 eggs
- 1 cup almond or dairy milk
- 2 tsp cinnamon
- 1 tsp allspice
- 1/2 tsp nutmeg
- 2 tbsp coconut sugar
- 1/2 cup oats
- 1 tsp baking powder
- 1/2-3/4 cup Chocolate chips
- Optional Toppings: Maple Syrup
- Butter
- Toasted pecans
- Pears
- Dried Cherries
Instructions
- In a blender, combine all batter ingredients: flour, puree, eggs, milk, spices, sugar, and oats. Blend until smooth.
- Heat a griddle on medium high heat. Spray pan, then pour on 1/2 cup to 3/4 cup of batter onto the pan. Sprinkle in chocolate chips and allow to cook until small bubbles form.
- Flip pancakes and cook for an additional 1-2 minutes. Remove from pan and serve immediately with pears, dried cherries, maple syrup, toasted pecans, and butter.
