Quinoa and Currant Summer Salad Recipe

Ingredients

  • 1/2 cup chopped parsley
  • 1/2 c chopped cilantro
  • 1/4 cup lemon or lime juice
  • 1 tsp. agave nectar or honey
  • 1/2 cup olive oil
  • 2 cups cooked quinoa
  • 1/3 cup currants
  • 1/2 cup chopped or sliced almonds
  • 3/4 cup julienned carrots
  • 1/4 cup chopped mint
  • 3/4 cup bell pepper chopped
  • 1 cup chopped sugar snap peas
  • 1/4 cup red onion diced
  • 1 cup cucumber diced
  • salt and pepper to taste

Instructions

  • For the dressing, combine lime, olive oil, honey, and a pint of salt and pepper. Mix together and set aside.
  • Next, in a large bowl, combine remaining ingredients. Pour over the dressing, then toss salad until everything is evenly coated in dressing.
  • Refrigerate and serve cold.
