Strawberry Quinoa Salad with Fresh Basil

Prep Time: 15 mins
Precook quinoa the night before and allow to cool; refridgerate.

Ingredients

  • 1/4 cup basil, finely chopped
  • 1/4 cup lime juice
  • 1 tsp. agave nectar or honey
  • 1 tsp. sea salt
  • 1/2 cup olive oil
  • 2 cups cooked quinoa
  • 1 cup sliced strawberries
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cucumber, finely chopped
  • 1/4 cup diced carrots, finely chopped
  • 1/4 cup red or yellow peppers, finely chopped
  • 1/4 cup chopped basil, finely chopped

Instructions

  • Mix the first 5 ingredients in a bowl; set aside.
  • Add the other ingredients together in a larger bowl.
  • Mix in the dressing. Serve!
